RAVIOLI  GORGONZOLA    [ S E R V E S    F O U R ]

  • Ravioli - 1 1/2 lb.
  • Heavy cream - 2 cups
  • Gorgonzola cheese - 1/2 lb.
  • Parmesan cheese - 4 tablespoons
  • Fresh spinach - 1/2 lb.
  • Tomato - 1
  • Salt and pepper to taste
  1. Drop ravioli in salted boiling water

  2. Place cream in a pan to simmer.

  3. Add the Gorgonzola, Parmesan, and simmer for a few minutes.

  4. Add the spinach.

  5. Drain the ravioli and add them to the sauce.

  6. Add the fresh tomatoes (diced) and toss for one more minute.

  7. Serve with crusty bread.
