- Potatoes - 8
- Eggs - 1
- Flour - 2 1/2 cups
- Salt and Pepper
- Boil 8 potatoes with skin for 45 minutes. Peel while hot
and put in masher/string device.
- Combine 2 1/2 Cups flour, 1 whole egg and kneed until
dough consistence. Sprinkle pepper and salt and work into
mixture.
- Roll to bread loaf shape and cut into 2' strips lengthwise.
Flour each strip, rolling to cover all sides.
- Cut strips into bite sized pieces.
- Place pieces into boiling salted water. Gnocchi is done
when floating on top.
- Spoon onto plate and top with favorite tomato, cream and/or
pesto sauce.
