GNOCCHI    [ S E R V E S    S I X ]

  • Potatoes - 8
  • Eggs - 1
  • Flour - 2 1/2 cups
  • Salt and Pepper
  1. Boil 8 potatoes with skin for 45 minutes. Peel while hot and put in masher/string device.

  2. Combine 2 1/2 Cups flour, 1 whole egg and kneed until dough consistence. Sprinkle pepper and salt and work into mixture.

  3. Roll to bread loaf shape and cut into 2' strips lengthwise. Flour each strip, rolling to cover all sides.

  4. Cut strips into bite sized pieces.

  5. Place pieces into boiling salted water. Gnocchi is done when floating on top.

  6. Spoon onto plate and top with favorite tomato, cream and/or pesto sauce.
