CHICKEN CACCIATORA [ S

- Chicken - 1 whole
- White Wine - 1/3 cup
- Carrots - 1
- Celery - 1 stalk
- Garlic - 3 cloves
- Tomato Sauce - 1 cup
- Fresh Tomato - 1
- Dried porcini mushrooms - 1/2 cup
- Green and black olives - 1/2 cup
- Olive oil - 1/2 cup
- Rosemary, Sage, Salt and Pepper
- Put salt and pepper on the chicken.
- Dust the chicken with flour very lightly.
- Pour 1/2 of the olive oil in a saute pan big enough for
the chicken.
- When pan is hot, add the chicken and let cook for 5 to
7 minutes per side.
- Remove the chicken; add the rest of the oil and the coarsely
chopped carrots, celery, onion and garlic.
- Cook until vegetables are nicely roasted.
- Add back the chicken and the wine and cook for a few more
minutes.
- Add the rest of the ingredients and cook for 20 more minutes
