CHICKEN  CACCIATORA   [ S E R V E S    F O U R ]

  • Chicken - 1 whole
  • White Wine - 1/3 cup
  • Carrots - 1
  • Celery - 1 stalk
  • Garlic - 3 cloves
  • Tomato Sauce - 1 cup
  • Fresh Tomato - 1
  • Dried porcini mushrooms - 1/2 cup
  • Green and black olives - 1/2 cup
  • Olive oil - 1/2 cup
  • Rosemary, Sage, Salt and Pepper
  1. Put salt and pepper on the chicken.

  2. Dust the chicken with flour very lightly.

  3. Pour 1/2 of the olive oil in a saute pan big enough for the chicken.

  4. When pan is hot, add the chicken and let cook for 5 to 7 minutes per side.

  5. Remove the chicken; add the rest of the oil and the coarsely chopped carrots, celery, onion and garlic.

  6. Cook until vegetables are nicely roasted.

  7. Add back the chicken and the wine and cook for a few more minutes.

  8. Add the rest of the ingredients and cook for 20 more minutes
